3 cups of 2cm cubed watermelon
2 oranges, peeled, sliced and quartered
100g feta cheese, drained, crumbled
1 red onion, cut into thin slices
1 cup picked mint leaves
2 tablespoons olive oil
Pepper to season

Watermelon, Orange and Feta Salad

This is such a refreshing salad, still embracing the last of the citrus season as we welcome the warmer months. It’s a common myth that people with diabetes can’t eat watermelon. But remember, watermelon is mostly made of water, and has minimal effect on blood glucose levels when eaten in the right serving size.

  • Step 1

    On a large platter, gently combine all ingredients and season with pepper.
