Cheesy Zucchini Fritters
Zucchini, or courgette if you are from overseas, is a very versatile vegetable. It is a good source of fibre, manganese, vitamin A, vitamin C, magnesium, folate, potassium, vitamin B1, vitamin B2, vitamin B6 and more! These cheesy zucchini fritters are a great way to get more zucchini goodness into your day! Why not try them for breakfast to kick start your days serves of vegetables.

Step 1
In a bowl, mix together the zucchini, lemon zest, mint leaves, eggs, garlic, flour and breadcrumbs.

Crumble feta cheese over the top and mix through.

In a non-stick frying pan over a medium heat, cook 2 tablespoons of the mixture for 2-3 minutes on each side until golden brown. Repeat until all mixture has been used.

Serve on a bed of fresh rocket leaves, sprinkle with parmesan cheese, freshly ground black pepper and Greek yoghurt.
Tip
Instead of using zucchini you could use grated carrot or a variety of grated vegetables of your choice!
